Try adding lemon juice or a dash of cinnamon to step up the flavor!Ingredients | Pureed Blueberry Muffins2 cups whole wheat flour1 cup white sugar1 tablespoon baking powder½ teaspoon salt1 teaspoon vanilla extract1 ½ cups blueberries½ cup unsweetened applesauce½ cup soy milk¼ cup margarineDirectionsPreheat the oven to 350 degrees F (175 degrees C). Line a 12-cup muffin tin with paper cups.Mix flour, sugar, baking powder, and salt together in a bowl. Stir in blueberries, applesauce, soy milk, and margarine.
