Bean sprouts, snowpeas, and even shrimp are also great in this dish.Ingredients | Capcay Goreng Ati Ampela2 tablespoons vegetable oil2 red onions, chopped1 potato, cut into cubes2 tablespoons soy sauce1 cup water1 skinless, boneless chicken breast, cut into bite-sized chunks2 tomatoes, cut into wedges1 fresh red chile pepper, chopped½ cup peas½ cup diced carrot½ cup corn kernels½ cup tomato sauce2 tablespoons chili sauce3 eggs, beaten1 (16 ounce) package fresh egg noodles, cut into short strandsDirectionsHeat the oil in a large, deep skillet or wok over medium heat; cook the onions in the hot oil until softened, about 5 minutes. Add the potato, soy sauce, and water; simmer until the potatoes are nearly cooked through, about 15 minutes. Stir the chicken, tomatoes, chile pepper, peas, carrot, corn, tomato sauce, chili sauce, and eggs into the mixture; toss to combine. Cook and stir until heated through, about 10 minutes.
